Oatmeal Muffins
Start with the base, then add ingredients for custom muffin flavors below
Makes 12 muffins
BASE INGREDIENTS
2½ c quick oats (or old fashioned rolled oats)
½ c oat flour (grind rolled oats into flour in blender, spice grinder, or food processor. Approx. 1c whole=½ c flour)
1 tsp baking powder
½ tsp baking soda
½ tsp salt (optional, but recommended)
1 T cinnamon
½ tsp ground nutmeg
¼ tsp turmeric
A pinch of black pepper (to activate the turmeric)
¼ c ground flax seeds
1½ T brown sugar
1 ripe banana, mashed
½ c unsweetened applesauce
2 tsp vanilla extract
1½ T pure maple syrup
½ c non-dairy milk
PREPARATION
Preheat oven to 350 degrees F.
In large bowl combine all dry ingredients.
In small bowl combine mashed bananas, applesauce, almond milk, vanilla and maple syrup. Stir until well mixed.
Add wet ingredients to dry and mix well.
Add additional mix-ins (below, or get creative!) and stir until well mixed.
Fill a paper lined 12-muffin tin.* Bake for 30 min.
Cool completely, wrap and store in air tight freezer bags and keep in the freezer until ready to eat. Microwave for 30-60 seconds to thaw.
*Must use muffin papers to prevent sticking without using oil!
Note: These are very dense muffins, and will not rise, so fill the cups/tin all the way up, rounded at the top!
Apple Blueberry Oatmeal Muffins
1 additional cup of unsweetened applesauce
1 c fresh or frozen blueberries, rinsed well*
AFTER applesauce is added and mixed well, gently stir in blueberries
Banana Oatmeal Muffins
3 additional ripe bananas, mashed
Banana Chocolate Chip
3 additional ripe bananas, mashed
¼ c vegan chocolate chips
Chocolate Cherry Oatmeal Muffins
(2 T cocoa powder whisked into ¼ c non-dairy milk)
1 c chopped cherries, fresh or frozen
2-4 T cherry ice cream topping or preserves
¼ c vegan chocolate chips
Cranberry Orange Oatmeal Muffins
1 c orange juice with extra pulp
1½ tsp grated orange peel OR 1 tsp orange extract
½ c reduced sugar Craisins
**Add an extra 2 minutes to baking time
Pumpkin Oatmeal Muffins
1 can (15 oz.) pumpkin or 1¾ c puréed fresh pumpkin
1½ T Pure Maple Syrup
⅓ c chopped dates
*Get creative for more flavors!
